Raw Avocado Key Lime Pie

Crust Ingredients:

  • 1 cup almonds or pecans
  • 1/2 cup walnuts
  • 1/2 cup coconut flour
  • 2 cups dates

Note:  If you only have almonds – that works too!  Just use 1 1/2 cups almonds

Filling:

  • 4 avocados
  • optional – 1 avocado seed
  • 3/4 cup of lime juice (approximately 10 limes)
  • 3/4 cup maple syrup
  • 1 cup coconut oil

Directions:

  • Add the nuts, coconut flour, and dates (make sure the seeds are out) to a food processor
  • Pulse in a food processor (you can use a blender too) until you can knead into a ball with a doughy consistency
  • Press into a pie plate starting from the center and working your way to the edges
  • Optional – for a firmer crust, dehydrate at 110* for 2 hours
  • For the filling, add lime juice, maple syrup, coconut oil, and avocados into the blender in that order
  • Pulse a few times to get it started then blend on high until mixed well
  • Pour the filling into the crust
  • Chill for 2 hours

I love to cut into individual pieces and freeze so when your friends visit and they ask for your amazing Key Lime Pie, you can pull it out and make their day!
